Wow what I week! I have been back up in Auckland since Monday and have been rushed off my feet working on my project, hence why this post is a bit (just a bit!) late, sorry!
This recipe is a twist on a classic biscuit, the melting moment. Melting moments are my mums most favourite biscuits, however she insists that many cafes just do not bake them right. She also warned me that this recipe has to be followed precisely, else the biscuits will collapse (and some of mine did!). However she was impressed with the ones that did not collapse. And lots of lemon icing can fix just about anything!
Anyway here is the recipe!
75g icing sugar
125g plain white flour
1/2 tsp baking powder
Heat oven to 180C
Cream butter and icing sugar
Mix in other ingredients
Roll the mixture into small balls
Press down the balls with a fork
Bake for 20 minutes
Cool, then stick together with icing
Melt 2 tablespoons of butter in a bowl
Using a hand whisk, whisk in about 1 cup of icing sugar
Add lemon juice to your taste
