Lemon Cordial

This recipe for Lemon Cordial comes from my Granny.  She always has a bottle (or two) of this in her fridge. All you have to do is pour about 10mm into the bottom of a glass, then full it up with plain old water.  Its also great with hot water (especially if you have a cold), fizzy water or even frozen!

When I was a teenager, I worked on a farm for a summer. Granny would mix up some of this cordial in a big bottle the night before and freeze it.  Over the course of the next day it would slowly melt, meaning I had a nice cold drink for the whole day!

Anyway, here’s the recipe.

Rind of 4 lemons
Juice of 6 lemons
1.3 kg of sugar
1 litre boiling water
40 grams tartaric acid

Place sugar in a large pot
Pour the lemon juice over the sugar
Add the lemon rind
Bring to the boil and stir until sugar is dissolved
Add tartaric acid, continue stirring until all is dissolved
Make sure you shake the bottle before use, else all the good bits stick to the bottom
